Binagoongan recipe is famous in Ilocanos. With them you will learn the most desirable variants of binagoongan. Binagoongan means "cooked in bagoong or fish sauce" Though my in-laws are not pure Ilocanos, but because they live in areas from which so many Ilocano live they knew recipes of the usual method of Ilocano cooking . They trained to cook different dishes with bagoong and this makes my in-laws place more special to me. Binagoongan is always associated with coconut milk and spices. It can be pork, carabao meat or vegetables cooked in bagoong and coconut milk complete with spices. This recipe procedure is vegetables binagoongan. Packed with the most nutritious vegetables in the Philippines like papaya, beans,eggplant, malunggay leaves and many other vegetables. It's a vegetarian recipe with a complete nutrition content especially the malunggay leaves which known as the Philippines' miracle plant.
Ingredients:
- 1 pc. papaya (sliced)
- 1/4 kg. beans (sitaw)
- 4 pcs. eggplant (chopped)
- malunggay leaves
- 1 pc. grated coconut (extract or coconut milk)
- salt
- 1 pc. chopped onion
- 2 cloves minced garlic
- 4 g. ground black pepper
- 1/4 cup fish sauce (bagoong)
Procedure:
- Prepare the vegetables by washing thoroughly and cutting them into thin slices.
- Saute garlic and onion
- add the bagoong
- cook for 5 minutes the add the papaya,eggplant, beans and the second coconut milk extract (pangalawang gata) then cover and cook for at least 5 minutes
- Add the malunggay leaves then let it boil for another 3 minutes
- Add the kakang gata or gist
- let it boil for 5 minutes then remove from heat and serve with rice.
