There are varieties of lumpia like: lumpiang shanghai (ground meat), lumpiang gulay (vegetables in sauce) and lumpiang prito (fried wrapped vegetables). This article is a procedure of lumpiang prito.
Ingredients:
1/2 cabbage
1/4 kg togue
1/4 kg. beans
2 pcs. potatoes (cut into cubes)
1 pc. sayote of chayote
1 pc. carrot (sliced)
lumpia wrapper
1 tsp. iodized salt
1 chopped onion
2 cloves minced garlic
msg. (optional)
oil
For the dip sauce:
1 cup vinegar
1 chopped onion
2 cloves garlic
1/4 tsp. iodized salt
4 g. ground black pepper
3 pcs. chopped red chili
Procedure:
-On a pan saute' garlic and onion
-Add carrots,beans,potatoes and sayote, cook for atleast 5 minutes.
-Add the cabbage and togue
-Add black pepper and other seasonings.
-Remove from heat, drain from oil and wrap with lumpia wrapper
-On a deep pan, heat a 320 ml of oil.
-Deep fry the wrapped lumpia until a brown color appears.
-Put in a strainer to drain from oil.
-Serve with a dip sauce.
