How to cook Afritada

The word Afritada is derived from the spanish word "fritada" meaning fried. Afritada is a meat stew that we learned from Spaniards and now one of the most common recipe in the Philippines. It is cooked in tomato sauce, carrots and potatoes with thick meaty sauce. Like any other meat stew, afritada is a simple recipe that needs only basic sauteing. Just like menudo, kaldereta and other saucy meat recipe, kaldereta is definitely one of the most yummy dish viand that you want to see on your dining table. The taste of afritada is a mixture of sweet,salty,spicy and a bit touch of sour. In most occasions in the Philippines like: fiesta, birthdays, weddings new years and Christmas eve, Afritada is always present on the buffet table but it can also be a regular dish for a typical Filipino family.Afritada can be chicken, pork or beef depending on what you desire to prepare. 

Ingredients: 

  • 1 kilo chicken (options: pork or beef) 
  • 6 pieces potatoes peeled & quartered 
  • 4 pieces carrots peeled & cut into cubes 
  • 1 head garlic minced 
  • 1 large red bell pepper cut into strips 
  • 2 large red onion chopped 
  • 500 grams sachet of tomato paste 
  • 1/2 cup water 
  • 3 tbsp. cooking oil 
  • 4 pcs. laurel leaves 
  • 1 tsp. black pepper, finely ground 
  • Salt to taste 

Procedure: 

  • On a pan, saute garlic and onions in oil Over a medium heat, add chicken, stir and cover 
  • Let it boil until half cooked 
  • Add potatoes and carrots then cover 
  • After a single boil, add red pepper
  • Add tomato paste and stir. Cover and cook for 5 minutes 
  • Add water and boil for another 10 minutes 
  • Add seasonings to taste Cover & simmer over low heat for another 10 minutes or until chicken is perfectly tender. 
  • Serve hot with rice & enjoy! Notes
