Sweet and Saucy pork tapa Recipe

The word tapa is derived from the Spanish word "tapas" which means to blanket. Tapas have created through Spanish history by merging flavors and and influences from various different social cultures and countries.

In the Philippines "beef tapa" is the most widely recognized tapa formula and it is normally dry and partnered with egg and rice ehich is popularly known as "tapsilog"

Today, I'm going to share a different tapa recipe, the "sweet and saucy pork Tapa". My kids love sausy meals with a little touch of sweetness.

Ingredients:


  • 1/2 kg lean pork, sliced
  • 3 cloves garlic (minced)
  • 1 big onion (chopped)
  • 1/3 tsp. fine black pepper
  • 5 tbsp. soy sause
  • 1 tbsp. oyster sauce
  • 3 tbsp. vinegar
  • 1 tsp. sugar
  • 2 tbsp.cooking oil
  • seasoning (optional)


Procedure:


  • Mix all ingredients (except garlic and onion) then marinate thinly sliced meat for at least 1 hour
  • Heat oil on a pan then saute garlic and onion
  • Add marinated meat, set aside the marinade
  • Saute/fry meat with garlic and onion, let it achieve desired tenderness.
  • Spread the marinade sauce the cover the pan.
  • In a medium heat, let it boil for at least 10-15 minutes or until the sauce becomes tick.
  • Remove from heat
  • Serve and enjoy!
  • Season to taste

Pork Steak is a Filipino dish that we inherited from the land of "uncle Sam". We, Filipinos usually called it "bistek" a tagalog slang for "steak". Although steak is not so expensive to make, it still symbolizes a good status in life for Filipinos. I remember one time, my mom's friend asked: "what's your viand for today" my mom repied: "pork steak" and her friend teased her: "wow, pa-steak steak na lang, social!"  very funny but I love How we  Filipinos treat life funny and easy. Steak recipe can be done with fish, beef, chicken, pork and the most popular in the Philippines: egg plant steak or what we usually called as "bistek na talong".

Among steak recipes I mentioned above, my most favorite is beef steak. I love the pure lean beef although pork with little fats attached is quite good especially if you don't serve it very often.. There are times that I want to be vegetarian for a day, I cook eggplant steak too. Every time I cook steak, I can't help eating more than the usual meal take. I really love the fresh onion on top of it and the yummy taste of soy sauce with calamnsi and a little touch of sweet and spicy flavor...OMG! I'm craving for steak!. My family love steak so much so I always make sure to prepare it for them during Sunday when we are complete at home and I make sure always to back up "extra rice".

Cooking steak is one of the easiest procedure of all recipes I wrote in my food blog. I'm pretty sure that like me, you and your family will enjoy this recipe. Just make sure to cut exact number of slices to serve for each family member. I will show you the procedure  in cooking pork steak which can make 5 servings just follow the steps below:

Ingredients:


  • 5 pcs. pork chops
  • 5 tbsp. soy sauce
  • 1 pc. calamansi
  • 1 big white onion (ring cut)
  • 1/2 cup cooking oil
  • 1 cup water
  • 1/2 tbsp. white sugar
  • salt and pepper to taste

Procedure:


  • Prior cooking, combine soy sauce, calamansi extract, sugar, salt and pepper in a bowl. Marinade pork chops for at least 1 hour but if you prefer to marinade it over night it would be better.
  • On a pan, heat cooking oil over medium heat.
  • Pan-fry the marinated pork chops for 5 to 10 minutes. Turn upside down and fry for another 5 minutes.
  • Upon frying, pork will produce oil and you have to remove these excess oil  to avoid too much fat.
  • Pour in the marinade, cover and let it boil for at least 30 minutes over medium heat.
  • Add water then boil for another 15 minutes or until meat is tender.
  •  Put in the onion rings on top the cover and remove from heat. The remaining heat inside the pan will slightly cook the onions but onions will remain fresh.
  • Transfer to serving plate.
  • Serve with rice and enjoy!

note: This procedure can be done  with beef,chicken,fish and eggplant.

The word Afritada is derived from the spanish word "fritada" meaning fried. Afritada is a meat stew that we learned from Spaniards and now one of the most common recipe in the Philippines. It is cooked in tomato sauce, carrots and potatoes with thick meaty sauce. Like any other meat stew, afritada is a simple recipe that needs only basic sauteing. Just like menudo, kaldereta and other saucy meat recipe, kaldereta is definitely one of the most yummy dish viand that you want to see on your dining table. The taste of afritada is a mixture of sweet,salty,spicy and a bit touch of sour. In most occasions in the Philippines like: fiesta, birthdays, weddings new years and Christmas eve, Afritada is always present on the buffet table but it can also be a regular dish for a typical Filipino family.Afritada can be chicken, pork or beef depending on what you desire to prepare. 

Ingredients: 

  • 1 kilo chicken (options: pork or beef) 
  • 6 pieces potatoes peeled & quartered 
  • 4 pieces carrots peeled & cut into cubes 
  • 1 head garlic minced 
  • 1 large red bell pepper cut into strips 
  • 2 large red onion chopped 
  • 500 grams sachet of tomato paste 
  • 1/2 cup water 
  • 3 tbsp. cooking oil 
  • 4 pcs. laurel leaves 
  • 1 tsp. black pepper, finely ground 
  • Salt to taste 

Procedure: 

  • On a pan, saute garlic and onions in oil Over a medium heat, add chicken, stir and cover 
  • Let it boil until half cooked 
  • Add potatoes and carrots then cover 
  • After a single boil, add red pepper
  • Add tomato paste and stir. Cover and cook for 5 minutes 
  • Add water and boil for another 10 minutes 
  • Add seasonings to taste Cover & simmer over low heat for another 10 minutes or until chicken is perfectly tender. 
  • Serve hot with rice & enjoy! Notes

When talking about cooking a complete meal for my family, I always thought of a recipe mixed with pork, sea foods and vegetables. There is one recipe that perfectly match wit this description: Kare-Kare. Kare-kare is a Filipino stew flavored with peanut with bagoong or alamang on the side. You're going to love this recipe because of it's unique delicious taste and the health benefits that you can can from its ingredients especially pork,vegetables, bagoong and peanut.

Ingredients:
  • 1 kg.Pork ribs
  • 5 cloves minced garlic
  • 1 chopped big onion
  • 1 tsp. ground black pepper
  • atsuete for coloring or you can use an artificial orange food coloring add just a pinch of it.
  • Bagoong (shrimp bagoong which also known as alamang)
  • Puso ng Saging (Banana Heart) quartered.
  • Eggplant(quartered)
  • String Beans atleast 10 pieces
  • 1 cup Peanut Butter
  • msg (optional)
  • 250 ml water for boiling the pork
  • 1 cup of water to be added to the sauce
Procedures:
  • In a casserole, boil pork ribs in a medium heatm  for an hour or until the pork is tender. Drain and set aside..
  • Saute the Bagoong with garlic and onions then set aside.
  • After cooking Bagoong. Prepare the ingredients.Wash your vegetables before cooking to ensure proper hygiene.
  • On a deep pan,, saute garlic and onions, add atsuete or food coloring.
  • add a little alamang
  • put the pork and let it boil for 5mins.
  • add the banana heart. Let it boil and put next the eggplant and string beans.
  • cook the vegetables for a few minutes then put the peanut butter.
  • Add seasoning.
  • Serve hot with rice. Don't forget the alamang as the side dish because it will be the one to complete your delicious kare-kare.

Longganisa is a processed food either made of pork or chicken. It is usually packed in Pig's dried colon skin and flavored with different spices and preservatives that can last for weeks when refrigerated. It can also be prepared as skinless by packing with food plastic but removing the plastic is a bit messy when frying Longganisa is commonly cooked by frying, but some people make some different experimental cooking procedures. There are two types of longganisa: the classic longganisa with spices and unsweetened which commonly found in the province of  Nueva Ecija and the sweetened longganisa which is the most familiar kind for every Filipino. Longganisa is usually served during breakfast but it can also be a burger patty when flatten and added with burger ingredients like mayonnaise and lettuce.

Ingredients in Making Skinless Pork Longganisa:

  •  1 kg. of lean pork
  • 5 cloves of minced garlic
  • 1 tsp ground black pepper
  • 2 tsp salt
  • 3 tbsp sugar
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 tbsp anise seeds (optional)
  • 1/2 tsp iodized salt
 Procedure In Making Longganisa:
  • Mix all the ingredients thoroughly.
  • Try to taste a bit to check the salt.
  • Pack with dried pig colon or food plastic.
  • Tie up both ends with equal intervals depending on your desired size.
  •  Refrigerate
How to Cook Longganisa:
  • On a pan, heat a small amount of oil in on a medium heat.
  • Put the longganisa, lower down the heat.
  • slowly and gradually cook longganisa
  • Turn it upside down when it becomes brown.
  • cook until the other side becomes pale brown.
  • Serve with rice or make it as longganisa burger.

The word Pochero is derived from spanish word "puchero" which means "stewpot". Pochero is a Filipino stew that can be made of beef, chicken or pork. It is a complete recipe with vegetables, fruits and meat. It has a mixed tastes of sweet and spicy that will surely satisfy your taste.

Pochero is the most favorite dish served at the banquets here in the Philippines like fiesta, weddings, birthdays and other important occasions with dining. A gathering is not complete without Pochero on the table. Unlike any other Filipino recipe, pochero is not easy to cook. It requires a lot of patience because it has so many ingredients to prepare. But I assure you, once you've tasted it, the effort and money spent worth it.


Ingredients:
  • 1/2 kilo pork (cut in to parts)
  • 3 cloves garlic (minced)
  • 1 large onion (chopped)
  • 1/2 tsp. black pepper
  • 1 hole red bell pepper (sliced)
  • 1 small whole cabbage (strips)
  • 2 pcs. medium sized chopped potatoes
  • 5 pcs. sliced saba (banana)
  • 2 tbsp. cooking oil
Procedure:
  • On a pan, heat oil and saute pork until it becomes light brown then set aside.
  • Heat oil and saute garlic and onion.
  • Add the pre-cooked pork
  • Add potatoes, saba, bell pepper.
  • season to taste
  • Cover the pan and cook for about 10 minutes.
  • When potatoes and saba are tender, you can now add the cabbage.
  • Again, cover the pan for about 2 minutes this time.
  • Adjust seasoning if desired
